In 2025, my daughter and I traveled to Tokyo. After taking in the electric energy of the famous Shibuya Crossing, we wandered down a side street and stumbled upon a tiny dessert shop with a line out the door. Inside, they were shaving frozen whole strawberries into the most incredible dessert we'd ever tasted — light as snow, bursting with natural sweetness, and topped with a silky cream that made it feel like a dream.
We were hooked. We went back three more times before our trip ended.
When we got home to Boise, we searched everywhere — grocery stores, dessert shops, farmers markets. Nobody in North America was making it.
So we decided to bring it here ourselves. We bought a trailer, perfected the recipe, and Shave Berry was born — a little piece of Tokyo, rolling through the streets of Boise, Idaho.
Every cup we serve is a reminder: the best adventures lead to the sweetest ideas. 🍓
